Chaitanya Pallerla, a food science gradaute student in the food science department for the University of Arkansas System Division of Agriculture is seen with a hyperspectral camera used to detect woody breast chicken meat. Research at the Arkansas Agricultural Experiment Station, the research arm of the Divison of Agriculture, developed a new machine learning model to process the data produced by the hyperspectral camera.
