Scott Lafontaine, left, and Bernardo Guimaraes hold beers made with rice malt during a 2024 study that identified several long grain varieties with unique brewing qualities. Lafontaine is an assistant professor in the food science department for Bumpers College and the Arkansas Agricultural Experiment Station, the research arm of the Division of Agriculture. Guimaraes is a Bumpers College food science graduate student.
