Novel food spoilage monitor that changes color on exposure to biogenic amines (IMAGE)

Researchers from Korea have combined polydiacetylene liposome and alginate to produce hydrogel beads for creating a novel colorimetric food spoilage sensor. The sensor easily detects biogenic amines in liquid or vapor form by changing color from blue to red, without any complicated apparatus.
